I read today refrigerating food can bring down the glycemic index and it can even help lead to a lower spike and lower calorie absorption.

Thank you! Indeed, cooking and cooling rice or potatoes in the fridge and then eating them either cold or slightly reheated turns them into resistant starch - a type of fiber that resists digestion in the small intestine, leading to a slower rise in blood sugar levels. Freezing sliced bread and then toasting it can also lower its glycemic response.
